Mickey Mouse Cookies

Since Free Dining dropped today, and it’s been a Disney food frenzy since 3:30 A.M. CST, I thought it’d be the perfect day to share this super versatile recipe with y’all, especially since our version has a Disney twist! So scoop up some ingredients and #MakeItYours, too!

#MakeItYours Mickey Mouse Cookies

Country Crock and Influenster (that’s a referral link; if you join Influenster and link up your Facebook, I get a little thanks by way of bonus points!) got together and let me snag a tub of Country Crock Calcium with Vitamin D totally gratis! Even though they were so generous, all opinions, thoughts and, hey, the images, too, are my own.

Let’s start with the recipe…

Makes approximately 4 dozen cookies
Prep Time 10 min
Cook Time 12 min

  • Ingredients:
  • 1 cup Country Crock® Spreadable Sticks or Tub, cold from the refrigerator
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1 to 2 cups of your choice of mix-ins

Directions:

Preheat oven to 375°. Mix Country Crock® Spread, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.)

Add your favorite mix-ins in any combination, and mix until every spoonful of dough has some of the delicious mix-ins.

Drop dough by rounded tablespoonfuls on ungreased baking sheets 3-inches apart.

Bake 10 to 12 minutes until edges are lightly golden. Cool 1 minute on wire rack; remove from sheets and cool completely.

Add toppings and decorations if desired. *We opted for candy coated chocolate because it’s awesome…and also maybe because it was a Valentine gift from one of my students that hadn’t been devoured yet.*

As you can see, the dough recipe itself is super basic, which leaves room for you to truly #MakeItYours by adding just about anything you can dream of as toppings, mix-ins or whatever your culinary heart can imagine! And it’s so easy (and a good math connection) that I let Stitchy do all the work while I shot pictures.

In the photos, you can see Stitchy used a tablespoon for the head and a teaspoon for the ears, but you could definitely eyeball the proportions. But we use those adorable little measuring spoons as often as possible!

 

The finished product turned out a little puffier than I expected. Not gonna cover up here…it’s probably because I accidentally used self-rising flour instead of all-purpose. Oops. Note to self: Label your flour containers next time.

All in all, I’d give this recipe another try (coughwiththerightflourcough), as I really like how basic it is and easily customizable. I don’t typically use spreads or butter-like products opting to go with the real deal, but this worked really well for baking, and I wouldn’t hesitate to try it in other recipes that call for butter.

Ten Places to Find PhotoPass Photographers at Walt Disney World

Disney’s PhotoPass is the complimentary photography service at Walt Disney World.  Hundreds of photographers are stationed around the Walt Disney World parks and resorts on any given day, and if you want to prove you were on the vacation (because, if you’re here planning, you’re probably behind the lens most of the time, am I right?), they’ll be your new best friends.  If you purchase Memory Maker, you’ll also want to get as many pictures taken as possible to make it worth your while.  With that in mind, here are the top ten places to find PhotoPass photographers and show off the kids’ customs, the matching tie-dye and, of course, your dazzling smile.

Where to Find PhotoPass Photographers at Walt Disney World

1. Almost Anywhere Within View of the Front Gate

Park entrances, icons (Cinderella Castle, Spaceship Earth, etc.) and main drags (Main Street USA, Sunset Boulevard, Hollywood Boulevard, etc.) are pretty much guaranteed spots to find a host of photographers ready to take pictures of your gorgeous face.

2. Characters

Characters are your next best bet.  Photogs are available for several but not all character meet and greets.  Most established spots (Epcot Character Spot, Town Square Theatre, etc.) will have PhotoPass available.

3. The World Showcase in Epcot

Epcot's World Showcase is chock full of wandering and fixed photographers and is usually home to our absolute favorite photog, Louis!

4. Interactive Photo Ops

Keep an eye out for "props" with which you can interact.  There are often photogs stationed here, too.

5. Special Event and Seasonal Set-Ups

Special Events (Star Wars Weekends, Mickey's parties, etc.) and seasonal backdrops and photo ops bring out more photogs, too.

 

6. Anywhere Guests Take Center Stage

Performance opportunities (Jedi Training Academy, Enchanted Tales with Belle, etc.) and makeover spots (Pirates League, Bibbidi Bobbidi Boutique) also offer PhotoPass for participants.

 

7. Disney Owned and Operated Resort Hotels

Photographers can occasionally be found at the resorts (only deluxe that I've experienced), too.  They tend to show up around the holidays and hang out near the decorations, but we've also spotted them other times of year.

8. On Select Rides

Your photos are also taken on select rides for you to cringe at or cherish and share on social media.  Prepare yourself on Buzz Lightyear's Space Ranger Spin, Seven Dwarfs Mine Train, Space Mountain and Splash Mountain in Magic Kingdom.  At Epcot, you only have to be ready for your close-up on Test Track.  Say "AHHHH!!!" on Rock 'n Roller Coaster and Tower of Terror at Hollywood Studios.  Expedition Everest and Dinosaur capture your looks of concern or fear in Animal Kingdom.

 

9. Attraction Exteriors

More photogenic rides also have photogs stationed to grab a shot of your mug with the attraction looming ominously behind you.

10. Select Dining Locations

Select dining locations offer backdrops or characters and a PhotoPass photographer.  All but Be Our Guest offer photos before you eat, so no worries about having your spilled dinner immortalized.  At least not in your PhotoPass photo.  Optional pics are offered at 'Ohana (breakfast), 1900 Park Fare (breakfast and dinner), Akershus (all meals), Be Our Guest (dinner), Chef Mickey's (all meals), Cinderella's Royal Table (all meals), Tusker House (all meals) and the three dinner shows: Hoop Dee Doo Musical Revue, Mickey's Backyard BBQ and Spirit of Aloha.  Photos area also taken at Hollywood and Vine and Sci-Fi Dine-In Theater during special Star Wars Weekend meals.

11. BONUS: Water Parks

Here's an extra one for ya!  Did you notice a few pics up there had us sporting swimsuits?  The PhotoPass crew is also at the water parks!  Sometimes they are literally in the water with you, which I think is awesome!  This may strike fear in the hearts of some of you, but embrace it.  Years from now when the kiddos look back on the pics, they're not gonna care what you look like in a swimsuit.  Say cheese!

In addition to these fairly established photog spots, you can often find them roaming the parks.  If you see someone with a camera and a snazzy PhotoPass vest they'll likely snap a pic for you, so don't be afraid to ask.  And now that you know where to find them, go practice your poses!

runDisney’s Frozen (seriously) 5K 2015

After my first taste of runDisney in 2013, I knew I had to do come back for more. I had full intentions of making 2014 another runDisney year, but life and schedules conspired against me, and it wasn’t until Princess Half Marathon weekend 2015 that I could get together with my girls and make it happen. But boy did it!! For an amazing girls’ weekend this past February, eight of us took on the Frozen (literally!!) 5K, and we had a blast!!
